Step 1: Put into a bowl Sugar, Flour, Yolks, and whip all together.
Step 2: Put into a pot Milk, Cream, and Glucose and start heating at 185°F(85°C). Then add the preparation from Step 1 plus Cocoa, and keep heating until it's enough dense.
Step 3: Time for cooling up... Put the preparation from Step 2 in the fridge, in a bowl with ice cubes for 3 hours.
Done! Suggestion: add some Nutella on the top of the Gelato, which is perfect with Chocolate.
